1. Garlic Beef Enchiladas



Ingredients: 
1 pound beef
2 tablespoon flour ( all purpose flour)
3 tomatoes ( or use tomato paste)
¼ teaspoon rubbed sage
1 teaspoon garlic powder
1 teaspoon salt
1 chopped onion
1 tablespoon chili powder
teaspoon ground cumin
Sauce:
¼ cup butter
5-6 garlic cloves, minced
teaspoon salt
2 cups shredded cheese
10 flour tortillas (6 inches)
2 tablespoon chili powder
cup flour (all purpose)
15 ounces tomato sauce
1 can ( 15 ounces) beef broth
2 teaspoon rubbed sage
Directions:
  1. Preheat the oven to 350 degree, cook beef and onion over medium heat along 6-8 minutes. Add flour and stir continuously then add tomatoes, bring to boil. Slow the heat and covered it till 15 minutes.
  2. Put butter in different saucepan and heat over medium flame. Add garlic and stir continuously, if bubbles occur so put tomato sauce and seasonings as well while heating.
  3. Put sauce in to grease baking dish. Place beef mixture in center on each tortilla, then put cheese over it. Roll this and place it over sauce.
  4. Put it in the preheated oven and bake 30-35 minutes, then put remaining cheese over it put it in oven until cheese melted, it takes 10-15 minutes. Then enjoy it!

2. Black bean chicken with rice



Ingredients: 
1 cup salsa
2 cups rice (hot cooked brown rice)
1 cup frozen corn
2-3 teaspoons canola oil
2-3 teaspoons chili powder
1 teaspoon cumin (ground cumin)
4 chicken breast (boneless)
1 can black beans ( 15 ounces)
1-2 teaspoon pepper
1/3 teaspoon salt
Directions:
  1. Take a bowl, put seasoning, sprinkle to both sides of chicken. Put oil in the pan and cook chicken until it becomes brown on both sides
  2. Add beans, salsa and corn in it, cover the pan and cook until 15-16 minutes. Then remove chicken from pan and serve it with bean mixture and with rice. Happy eating!

3. Steak tortillas



Ingredients: 
1 chopped onion
1 teaspoon flour (all purpose)
6 flour warn tortillas ( 8 inches)
teaspoon ground cumin
1/3 cup salsa
1/3 teaspoon garlic powder
1/3 cup water (cold)
1/3 teaspoon chili powder
2 cups sliced beef
Shredded cheese (optional)
Directions:
  1. In a pan, sauté steak and put onion into it and sauté for 1-2 minutes, then add salsa, cumin, garlic powder and chili powder.
  2. Take a small bowl, put flour and water then stir it until becomes smooth and add it to skillet, when it comes to boil so stir it and wait until it becomes thick. Place beef mixture on tortillas, and put cheese over it. Then serve it and enjoy it!

4. Mexican Lasagna



Ingredients: 
1 can of beans ( 15 ounces)
4 chopped green chilies
2 cups of water
3 onions
1-2 tomato chopped
2 cups sour cream (16 ounces)
14 ounces lasagna noodles
2 pounds beef
1 taco seasoning
2 tablespoon salsa (hot)
3-4 cups of shredded cheese
1 jar of mild salsa (16 ounces)
1 can slice ripe olives (drained)
Directions:
  1. In a pan, cook beef over medium heat. Put beans, hot salsa and taco seasoning.
  2. Grease the baking dish, layer the noodles and meat mixture then put cheese over it. Repeat the layer 2 times.
  3. Combine water and salsa then put it at top over it then put it in the preheated oven for 1 hour.
  4. Put sour cream and cheese, onions, tomatoes, olives and other things if desired then put it into oven and wait until 10-15 minutes. Then serve and enjoy it!

5. Zesty Tacos



Ingredients: 
8 taco shells
1 envelope taco seasoning
1.2 pound beef
1.5 cup of water
1 cup shredded cheese
cup Italian salad for dressing
1 cup tomatoes (chopped)
1 cup lettuce
1 can black peas ( rinsed and drained)
Directions:
  1. In a large pan, put some oil and cook beef, then drain. Put taco seasoning and water. When bubbles occur into it so reduce the flame, then uncover it and wait for 4-5 minutes.
  2. Prepare taco shells according to that directions which has written on pack. Put peas into pan and heat continuously then add beef mixture into taco shell. Then add tomatoes, cheese and lettuce. And dressing with salad.

6. Taco filled peppers



Ingredients: 
1 pound beef
1 cup salsa
1/3 cup sour cream
1 chopped tomato
cup kidney beans
1-2 envelop taco seasoning
1 tablespoon salt
3 green peppers
Directions:
  1. In a pan, put beef and cook over medium heat, then put kidney beans, taco seasoning and salsa. If bubbles occur so slow the flame.
  2. Cut pepper in half length, then put oil and then pepper
  3. Put mixture of beef in pepper and place into baking dish and put it into the preheated oven, when it become crispy so put out and put tomato sauce and cheese over it and serve and enjoy it!

7. Turkey burritos with fresh fruits



Ingredients: 
1 tablespoon lime juice
1 pepper jalapeno
2 kiwifruit (chopped)
1 mango (chopped)
2 green onions (chopped it into slice)
3 tablespoon red onion (chopped)
1 tomato
Burrito ingredients: 
1 tablespoon oil
2 garlic cloves
1 pound lean turkey
1 cup shredded cheese
2 cups corn (frozen)
teaspoon cumin
teaspoon turmeric
11 whole wheat tortillas
1 jar of salsa ( 16 ounces)
1 can black beans ( 16 ounces)
Directions:
  1. Combine first 7 ingredients for salsa. Freeze it until serving
  2. In a non-stick pan, cook turmeric, cumin and turkey into oil on medium flame then add garlic and cook for few minutes, then put some water and stir and wait for 3 minutes.
  3. Put corn, black beans, and salsa, wait until it bubbles. Reduce the heat and wait 10-15 minutes until so much liquid has evaporated.
  4. Put turkey mixture on each tortilla. Then put cheese over it. Fold their sides and roll that. Serve with salsa and enjoy it.

8. Baked chicken chimichangas



Ingredients: 
1/3 cup shredded cheese
1 teaspoon cumin
2 tablespoon butter
5 flour tortillas of 8 inches
2/3 cup onions (chopped)
1-1/2 cups chicken breast (cooked)
1 teaspoon oregano
2 cups picante sauce
Directions:
  1. Take a bowl, put all the above things in each tortilla. Fold sides and ends over filling and roll up. Then place it in the baking dish.
  2. Bake it for 25 minutes and top with onion and cheese. Then enjoy and serve it.

9. Taco corn bread squares



Ingredients: 
1 pack of bread
1/3 cup of milk
¼ onion (chopped)
1 tomato
1 cup lettuce
1 cup sour cream
1 egg
2-1/2 cups of meat
1 can beans (refried)
1 can olives (sliced)
Directions:
  1. In a bowl, put egg, bread and milk until blended. Spread it into grease baking dish.
  2. Bake it for 15 minutes at 350 degree. Mix taco meat and bean, put over it on corn bread then add sour cream, cheese, onion and put over meat mixture.
  3. Bake for 25 minutes and put cheese and wait until it melted. Put lettuce, tomato, olives and cheese and then serve it.

Ingredients: 
3 potatoes
2 tablespoon green onions (chopped)
¼ cup shredded cheese
3 tablespoon cilantro
2 tablespoon milk
2 garlic cloves
¼ cup goat cheese
